Potato and Smoked Sausage Soup

This lower fat version uses smoked turkey sausage rather than regular smoked sausage.  It is thick with chunky potatoes, meat and celery.

Course Soup

Ingredients

  • 1 tbsp olive oil
  • 1/2 medium onion, chopped
  • 3 stalks celery, chopped
  • 1/2 pkg Turkey Smoked Sausage, diced
  • 6 large potatoes, peeled and diced (or use 8 medium size)
  • 6 cups chicken or vegetable broth
  • 1/2 cup cheddar cheese grated
  • 1/2 tsp black pepper

Instructions

  1. Saute the onion in olive oil 2-3 minutes.  Add celery and continue to saute for a few more minutes.

  2. Add the sausage and saute until the vegetables are tender and the meat is starting to brown.

  3. Add the diced potatoes, chicken broth and pepper.  Cover and bring to a boil.

  4. Reduce heat and simmer the potatoes until tender, about 30-40 minutes.

  5. If more moisture is needed, you can add extra broth or a small amount of milk.   

  6. Add in the grated cheese and stir while it melts.  Add additional salt and pepper to taste.  Serve with toppings such as additional grated cheese, chopped chives or green onions.
