This dessert is a refreshing blend of cookie crust, cream cheese filling and strawberries wrapped in a glaze. Add a dollop of whipped cream and you have the perfect springtime dessert.
Blend crust ingredients in a mixer or with pastry fork until blended and crumbly. Pat onto a 12" pizza pan, spring form pan or 9 by 9 baking dish. Bake at 350 degrees for 15-20 minutes until lightly browned. Allow to cool completely.
For filling blend cream cheese in mixer with the sugar and vanilla until creamy. Spread onto the cooled cookie crust.
Prepare the strawberries by washing, hulling and cutting into bite size pieces. Stir the strawberries gently into the prepared strawberry glaze. Layer on top of the cream cheese and spread evenly. Refrigerate until ready to serve.
This dessert is best served the same day that it is prepared as the crust can start to get soggy.
