A ready-for-Spring dessert that is refreshing and will put a smile on everyone's face.
Add eggs, oil, mandarin oranges and liquid to cake mix. Blend to moisten and beat on medium for 2 minutes.
Pour into a prepared cake pan of your choice. To prepare pan just give it a spritz of non-stick spray.
Bake at 350 degrees for 20-25 minutes. Remove when center springs back or toothpick inserted into center comes out clean. Cool.
Mix together the pineapple and pudding until blended. Fold in the cool whip and use to frost your cooled cake. You can top with sprinkles, toasted coconut or chopped nuts to decorate. Keep this cake refrigerated.
