Celebrate Spring with Sunshine Cake

Woo Hoo, Spring is finally here!  It’s time to celebrate and in our home, that means Sunshine Cake.  This cake has as many variations as it has fans.  That’s okay.  There can never be enough Sunshine Cake in this world.  This is my go-to recipe for dessert during the spring and summer months.  I encourage you to celebrate spring with Sunshine Cake!

While your cake is baking, I thought you might want some Spring inspiration to get you thinking about the season to come.  So here is a list of some of my favorite things to do in the spring!

Do a little spring cleaning

Let’s face it spring is a great time to start cleaning up and clearing out.  If you set a goal to declutter your house this year and have yet to start decluttering then now is a great time to get going.  Begin by picking just one area to work with.  For example, pick your entry closet or your dresser.  Just begin the process.  If you do not need a major decluttering than just spend some time freshening up your home.  Dust, vacuum and mop and then change out your decor for more spring related items like my bird decor.

Spend time outdoors

Even though it’s still chilly, windy and rainy (or worse where you live),  it’s good to get outside.  Take a walk around your neighborhood or find a local place to go hiking.  Spend some time in your yard and garden anticipating the growing season to come.  Listen to the birds, explore and discover early season flowers and growth and just enjoy the beginning of new life.  Now is a perfect time to get your yard and garden ready for the season.

Re-evaluate your goals for the year

We are in week 12 of The 12 Week Year.  That means that whatever your goals are you should have something wonderful accomplished.  Take time to assess where you are and what you want to accomplish in the next 12 weeks.  So you fell off the wagon and didn’t follow through with your goals?  That is okay.  You can start today to prepare for the next 12 weeks!  Take some time though to really figure out what went wrong and what went right.  That can help you improve your success.  Maybe you set too many goals and got overwhelmed.  Maybe life smacked you in the head and you are just starting to get back to normal.  After nearly 5 weeks of disarray (painting), we are finally starting to put our house back together.  I totally get it.  So reassess your 12 Week Year and get started!  Learn more about the 12 Week year in this post.

Connect with friends and family

The best way to enjoy spring is to spend some time with the people you love most.  Invite them to your newly cleaned home for some Sunshine Cake and coffee.  We have all been holed up in our winter homes for too long.  Spring is a great time to celebrate and to connect.

So without further ado, here is my Sunshine Cake Recipe.  I hope that it will bring some smiles to your spring celebration!Cake on cake plate and slice on plate.

A ready-for-Spring dessert that is refreshing and will put a smile on everyone's face.

Course: Dessert
Ingredients
  • 1 box yellow cake mix
  • 3 whole eggs
  • 1/3 cup vegetable oil
  • 1 8 oz. can mandarin oranges, save juice
  • 1 cup mandarin juice plus water, to make total amount
  • 1 20 oz. can crushed pineapple, with juice
  • 1 small box instant vanilla pudding mix
  • 1 8 oz. carton cool whip
Instructions
  1. Add eggs, oil, mandarin oranges and liquid to cake mix.  Blend to moisten and beat on medium for 2 minutes.

  2. Pour into a prepared cake pan of your choice. To prepare pan just give it a spritz of non-stick spray.

  3. Bake at 350 degrees for 20-25 minutes.  Remove when center springs back or toothpick inserted into center comes out clean.  Cool.

  4. Mix together the pineapple and pudding until blended.  Fold in the cool whip and use to frost your cooled cake.  You can top with sprinkles, toasted coconut or chopped nuts to decorate.  Keep this cake refrigerated.

Life begins to move faster as spring rolls around.  So before the busy days ahead, take some time to celebrate the new season.  Enjoy these early days and the changes that it brings.  Don’t rush things but just be present in each day.  And don’t forget to include a little Sunshine Cake in your celebration!
