Bubbles and Squeak or should I say eek

Not long ago I saw some beautiful pictures of Butchart Gardens in the spring.  They reminded me of a wonderful trip that my husband and I took to Victoria BC a number of years ago.  I had a good laugh when I remembered the breakfast that we enjoyed at a quaint downtown restaurant.  We ordered a large platter of Bubbles and Squeak and set about to devour it.  About halfway through our meal out crawled the largest beetle that we had ever seen…eek.  At the time it wasn’t too amusing to us but now we can laugh about it.

The Bubbles and Squeak really was amazing.  I have since made it one of my regular brunch recipes.  It is very easy to throw together when you have company.  I often will pre-cook the potatoes and cut up the vegetables ahead of time so that it goes together quickly.  In addition to this, the amount can easily be adjusted for larger or smaller groups.  I hope that you also will enjoy it.  Just make sure to thoroughly wash the spinach or you might find a beetle joining you for breakfast.

A savory blend of potatoes, vegetables, cheese and eggs.  Makes an enjoyable breakfast, brunch or even dinner entree.

Ingredients
  • 2 medium potatoes
  • 1/2 small onion
  • 1/2 small bell pepper
  • 1/2 medium zucchini
  • 2 cups spinach
  • 1/4 cup parmesan cheese
  • 4 large eggs
  • 1 tbsp olive oil
Instructions
  1. Microwave or bake the potatoes until tender, allow to cool and cut into bite size pieces.  Then keep potatoes warm while vegetables cook.

  2. Chop onion and pepper into 1/2 inch pieces.  Saute in the olive oil for 2-3 minutes.

  3. Cut zucchini into 1/2 inch chunks and then quarter.  Add to the onions and continue to saute until tender.

  4. Arrange potatoes in a single layer on an oven safe platter. 

  5. Top the potatoes with the sauteed vegetables, spreading evenly. Bake in 350 degree oven for 10-15 minutes.

  6. Spread the spinach leaves on top of the vegetables.

  7. Sprinkle with the Parmesan cheese.

  8. Bake for an additional 10 minutes until tender and the cheese is starting to brown.

  9. Just before removing from the oven, fry the eggs to desired doneness.  Serve with the eggs on the side or you can top the Bubbles and Squeak with the eggs.
