Strawberry Pizza Dessert

I like the rhythm of the seasons in my home and garden, especially when it comes to preparing foods.  I try to eat seasonally whenever possible so you will find plenty of recipes with rhubarb, strawberries and asparagus in the spring.  One of my favorite strawberry recipes is a pie-like dessert that we call Strawberry Pizza Dessert.  Originally I made this in a medium size spring form pan but over the years that gave way to a 9 by 9 inch baking dish.  When I am making this for a crowd I will make 1 and 1/2 times the recipe to fit in a 9 by 13 inch baking dish.

No matter what you bake it in this dessert has everything a yummy dessert needs…a nice cookie crust, cream cheese filling,  strawberries in glaze  and fresh whipped cream.  It goes together easily and I often will prepare everything the day before and then assemble shortly before serving.   The next time you need a winning recipe for a get together or just for your special family you might give this dessert pizza a try.  Enjoy!

This dessert is a refreshing blend of cookie crust, cream cheese filling and strawberries wrapped in a glaze.  Add a dollop of whipped cream and you have the perfect springtime dessert.

Ingredients
Crust
  • 1 cup flour
  • 1/3 cup powdered sugar
  • 1/2 cup margarine or butter
Filling
  • 8 oz. Neufchatel Cream Cheese
  • 1/2 cup sugar
  • 1 tsp. vanilla
Topping
  • 1 quart fresh strawberries
  • 1 container strawberry glaze
Instructions
  1. Blend crust ingredients in a mixer or with pastry fork until blended and crumbly.  Pat onto a 12" pizza pan, spring form pan or 9 by 9 baking dish.  Bake at 350 degrees for 15-20 minutes until lightly browned.  Allow to cool completely.

  2. For filling blend cream cheese in mixer with the sugar and vanilla until creamy.  Spread onto the cooled cookie crust.

  3. Prepare the strawberries by washing, hulling and cutting into bite size pieces.  Stir the strawberries gently into the prepared strawberry glaze. Layer on top of the cream cheese and spread evenly.  Refrigerate until ready to serve.

  4. This dessert is best served the same day that it is prepared as the crust can start to get soggy.
